 Pumpkin Quesadillas:
  • 3 cups 1 1/2-inch cubes peeled seeded sugar pumpkin or butternut squash (from about half a 2-pound whole pumpkin)
  • 1 finely chopped seeded jalapeño (about 2 tablespoons)
  • 12 8-inch-diameter flour tortillas
  • 10 ounces feta cheese, crumbled
  • 1 1/2 cups coarsely chopped fresh cilantro
  • 2 limes, each cut into 6 wedges
Cook the pumpkin in boiling salted water for about ten minutes or until tender. Cool for about ten minutes and puree in a food processor while still slightly warm. Stir in the jalapeño to the pumpkin mixture and season with salt and pepper. Spread the pumpkin mixture onto 6 tortillas evenly and sprinkle feta over it. Top each evenly with cilantro and sprinkle on black pepper. Top with the other tortilla and cook in a skillet on medium heat until the tortilla is brown and slightly crispy.

Squash Spaghetti:
This Halloween dinner recipe takes advantage of seasonal squash.
  • 1 spaghetti squash (about 4 pounds), halved lengthwise, seeds removed
  • 1 tablespoon extra-virgin olive oil, plus more for brushing
  • 1 tablespoon packed light-brown sugar
  • Coarse salt and freshly ground pepper
  • 1/2 cup grated Parmesan cheese (about 2 1/2 ounces)
  • 1/2 cup chopped fresh flat-leaf parsley
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup blanched hazelnuts (1 ounce), toasted and coarsely chopped
Brush the cut sides of the squash with oil and then sprinkle with sugar, salt, and pepper. Place the squash cut side down on a rimmed baking sheet and roast at 400 degrees for about 45 minutes. Let the squash cool for about 10 minutes before scraping the squash with a fork to remove the flesh and separate it into long strands (like spaghetti!). Place in a large serving bowl and add oil, parmesan cheese, parsley, cilantro, hazelnuts, and salt and pepper to taste. Toss to mix and serve like spaghetti!
 
  
Mummy Meatloaf:
The kids will love this fun Halloween main course!
  • 1-1/2 lbs. extra lean ground turkey or beef
  • 1 small white onion, finely chopped
  • 1 egg
  • 1 cup skim milk
  • 1 cup dry breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup + 2 Tablespoons ketchup
  • 2 Tablespoons brown sugar
  • 8 ounces pappardelle pasta (or lasagna noodles, cut lengthwise in half with frilly edges removed)
  • 1 3-ounce mozzarella ball, divided
  • 2 pitted black or green olives
Preheat your oven to 350 degrees F and grease a 9-inch round baking pan.  Mix the meat, egg, onion, milk, breadcrumbs, salt, and pepper. Press the meat mixture into the pan, rounding the edges to almost make a dome shape. Mix the ketchup and brown sugar and spread it evenly over the top of the meatloaf. Bake the meatloaf for 1 hour and let cool for 20 minutes. Cook and drain the noodles and place the meatloaf on a serving tray. Layer the noodles over the meatloaf to look like mummy wrappings. Slice the mozzarella ball in half and layer into the noodles to look like “eyeballs”. Put an olive slice on each “eye” and serve!
 
Spooktacular Pizza: 
A ghostly pizza recipe for a spooky Halloween night!
Dough:
  • 1 1/2 cups unbleached all purpose flour
  • 1 teaspoon dry yeast
  • 1 1/2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 1/2 teaspoons coarse salt
  • 1/2 cup warm water (105°F to 115°F)
Toppings:
  • 1 cup whole-milk mozzarella cheese
  • 3 tablespoons Parmesan cheese
  • prosciutto, sliced crosswise into cubes
  • 2 teaspoons chopped fresh thyme
  • 1 can tomato sauce
  • 1/2 can of olives
Mix flour, salt, warm water, and yeast in large bowl. Stir. Add oil and honey, and knead dough until it is smooth and elastic. Refrigerate dough in bowl for at least 2 hours. While the dough is in the refrigerator, prepare the toppings. Cut olives lengthwise to resemble spider legs. You will use a full olive for the "body" of the spider. Next, cut olives again to form the eyes and mouths of the ghost. Using your fingers, shape mozzarella into 6 ghost shapes, pulling the cheese in different angles to form a ghostly figure. Next, cut the prosciutto into cubes as an added taste. Cook the pizza dough for at least 30 minutes at 500°F. Let the crust cool, and apply tomato sauce, thyme, prosciutto, and mozzarella ghosts. Lastly, decorate the pizza with your olive spiders and decorate the ghosts' faces as the finishing touch.
