It can be a challenge to come up with a healthy school lunch that kids will actually eat. Title the folders with phrases such as “Teacher’s Pet Back to School Recipes” or “Healthy and Delicious.” As each guest enters, hand them a folder and tell them to collect a copy of each recipe. Ingredients:

  • 2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup sugar
  • 1 teaspoon orange zest
  • 1/4 cup unsalted butter, melted
  • 1 1/4 cups sour cream
  • 3/4 cup cranberries

Preparation: 

  1. Preheat the oven to 350 degrees. Grease a muffin pan and set aside. 
     
  2. Combine the flour, baking powder, and salt in a medium bowl. Set aside. 
     
  3. In a large bowl whisk the egg until combined. Add the sugar and whisk until the mixture is thick. Stir in the orange zest. Slowly whisk in the butter. Add half the sour cream, whisking until combined. Do the same with the rest of the sour cream. 
     
  4. Add the flour to the sour cream mixture and fold with a spatula. Add the cranberries and keep folding until berries are distributed. Evenly divide the batter into the muffin pan (about 2 1/2 tablespoons per cup) and bake for 20-23 minutes or until golden brown.
