Baked Cranberry Brie
- 4 sheets phyllo pastry
- 1 round (8 oz) of brie cheese
- 3 tbs. cranberry sauce
- ¼ cup melted butter
Brush the top of each sheet of pastry with the melted butter and layer the pastry sheets on top of each other. Place the brie in the middle of the pastry and coat it with cranberry sauce. Twist the edges of the pastry around to enclose the brie in the pastry and brush with the remaining butter. Bake for 20 minutes at 400 degrees or until the crust is nicely browned. Let it sit for 20 minutes before serving.
Bacon-Stuffed Cherry Tomatoes
- 1 ½ lbs. bacon, cooked until crisp
- ½ cup green onions, chopped
- ½ cup mayonnaise
- 24 cherry tomatoes, stems removed
After cooking, drain bacon on paper towels. Dice or crumble into small pieces. In medium bowl, mix bacon, onions and mayonnaise. Place tomatoes stem side down on a cutting board. Cut a thin slice off the bottom. Scoop out the pulp with a spoon or melon ball scooper. Turn tomatoes over on a paper towel for 30 minutes to drain. Fill tomatoes with bacon mixture. Refrigerate several hours, or overnight.
Spinach Artichoke Dip
- 1 cup grated Parmesan
- 1 cup sour cream
- ½ cup mayonnaise
- 3 tbsp. lemon juice
- 1 garlic clove, pressed
- 5 oz. shredded Pepper Jack cheese
- 10 oz. frozen chopped spinach, thawed
- 1 can artichoke hearts, drained and chopped
Combine first six ingredients and a cup of Pepper Jack cheese. Add spinach and artichokes and spoon into greased baking dish. Sprinkle with remaining cheese and bake at 350 degrees for 40 minutes. Serve with crackers and cut vegetables.
